At The Raw,

We showcase the finest produce from Geelong and the surrounding region, especially from the ocean. Designed by award winning chef Jack Lee, our menu isn’t tied to any single cuisine, allowing each ingredient to be presented in the way that suits it best.

More than 90% of our ingredients comes from local farmers and producers who share our respect for the land and sea. Sustainability and low-waste cooking guide our kitchen, with every ingredient used thoughtfully and to its fullest potential.

That same approach carries through to our wine list.

We work closely with local winemakers and choose our wines the simple way, by visiting cellar doors, tasting in person, and selecting bottles we genuinely love and want to share.

In 2026, that respect for the sea extends to our oysters, with $1 from every oyster sold donated to locals.
